Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the broccoli florets, olive oil, minced garlic, lemon zest, lemon juice, and red pepper flakes (if using). Toss well to ensure all the broccoli is evenly coated.
Season with salt and pepper to taste, then toss again to incorporate.
Spread the broccoli mixture onto a baking sheet in a single layer, allowing space for the florets to roast rather than steam.
Roast in the preheated oven for 18-20 minutes, or until the broccoli is tender and the edges are nicely browned, stirring halfway through for even roasting.
If using, sprinkle the grated Parmesan cheese on top of the broccoli in the last 5 minutes of roasting to allow it to melt slightly.
Once done, remove the broccoli from the oven and garnish with chopped fresh parsley before serving.
