Zesty Lemon Garlic Couscous Salad

Ingredients

vegetable broth or water

Instructions
In a medium-sized pot, bring the vegetable broth or water to a boil.
Once boiling, remove from heat and stir in the couscous. Cover and let sit for about 5 minutes, or until the liquid is absorbed.
Fluff the couscous with a fork and allow to cool.
In a small bowl, whisk together the olive oil, minced garlic, lemon zest, and lemon juice.
In a large mixing bowl, combine the cooled couscous, cherry tomatoes, cucumber, red bell pepper, red onion, and chopped parsley.
Pour the lemon-garlic dressing over the salad and gently toss to combine until all ingredients are evenly coated.
Season with salt and pepper to taste.
If using, sprinkle with crumbled feta cheese for an extra layer of flavor.
Notes
Serve the salad in a large bowl, topped with additional parsley and a lemon wedge for a pop of color.
