1 pre-made pie crust (store-bought or homemade)

1 cup fresh spinach, chopped

1 medium zucchini, diced

1 red bell pepper, diced

1/2 cup cherry tomatoes, halved

1/2 cup mushrooms, sliced

4 large eggs

1 cup whole milk

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs (like parsley or chives) for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Place the pie crust into a 9-inch pie dish and prick the bottom with a fork to prevent bubbling. Pre-bake the crust for 10 minutes, then remove from the oven and set aside.

      In a skillet over medium heat, sauté the diced zucchini, red bell pepper, and mushrooms for about 5-7 minutes until they soften. Add the spinach and cook just until wilted, then remove from heat.

        In a large mixing bowl, whisk together the eggs, whole milk, oregano, garlic powder, salt, and pepper until well combined.

          Stir in the sautéed vegetables and shredded cheese into the egg mixture until evenly combined.

            Pour the vegetable and egg mixture into the pre-baked pie crust, spreading it out evenly.

              Top with halved cherry tomatoes for a colorful finish.

                Bake the quiche in the preheated oven for 30-35 minutes, or until the center is set and the top is lightly golden. If the edges of the crust start to brown too quickly, cover them with foil.

                  Remove from the oven and let it cool for about 10 minutes before slicing.
