Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and white sugar until smooth and fluffy.
Beat in the egg, vanilla extract, and almond extract until well combined.
Gradually mix in the dry ingredient mixture, stirring until just combined. Do not overmix.
Scoop out small portions of dough (about 1 tablespoon each) and roll them into balls.
Roll each ball in the granulated sugar to coat, then place them on the prepared baking sheet about 2 inches apart.
Flatten each ball slightly with the bottom of a glass or your palm to about ½ inch thick.
Bake in the preheated oven for 8-10 minutes or until the edges are golden. The centers may look slightly underbaked; they will firm up as they cool.
Remove from the oven and let them sit on the baking sheet for about 5 minutes before transferring to a cooling rack to cool completely.
