Instructions
In a large mixing bowl, combine the cooked and cooled cheese tortellini, halved cherry tomatoes, halved mozzarella balls, and torn basil leaves.
In a small mixing bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
Pour the dressing over the tortellini mixture and gently toss until everything is evenly coated.
Taste the salad and adjust seasoning with more salt and pepper if desired.
Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
Serve cold or at room temperature, tossing gently again before serving.
