3 cups frozen hash browns, thawed

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup bell pepper, diced (any color)

1/2 cup onion, finely chopped

6 large eggs

1 cup milk

1 cup shredded cheese (cheddar or a blend)

1/4 teaspoon garlic powder

Fresh herbs (like chives or parsley) for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the thawed hash browns, olive oil, salt, and black pepper. Mix until well combined.

      Press the hash brown mixture firmly into the bottom and up the sides of a 9-inch pie dish, forming a crust. Bake in the preheated oven for 20 minutes, or until the edges are golden brown.

        While the crust is baking, heat a nonstick skillet over medium heat. Add the chopped onion and bell pepper, and sauté until the onion becomes translucent (about 5 minutes).

          Add the chopped spinach and cherry tomatoes to the skillet. Cook for another 2-3 minutes, until the spinach wilts and the tomatoes soften. Remove from heat and set aside.

            In a large mixing bowl, whisk together the eggs, milk, garlic powder, and a pinch of salt and pepper. Stir in the sautéed vegetable mixture and half of the shredded cheese.

              Once the hash brown crust is finished baking, carefully pour the egg and vegetable mixture into the crust.

                Sprinkle the remaining shredded cheese on top of the quiche.

                  Return the quiche to the oven and bake for an additional 25-30 minutes, or until the eggs are set and the top is slightly golden.

                    Once baked, remove the quiche from the oven and let it cool for a few minutes before slicing.
