Spicy Buffalo Cauliflower Bites

buttermilk (or plant-based milk + vinegar for vegan option)

garlic powder

onion powder

smoked paprika

cayenne pepper (adjust to taste)

salt and pepper

buffalo sauce (store-bought or homemade)

olive oil

fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper.
Slowly whisk in the buttermilk until you have a smooth batter. It should be thick but pourable; adjust with more flour or milk as necessary.
Dip each cauliflower floret into the batter, ensuring it's fully coated, and then place it on the baking sheet.
Bake the cauliflower in the preheated oven for 20-25 minutes, until golden and crispy, turning halfway through for even cooking.
Meanwhile, in a small saucepan, heat the buffalo sauce and olive oil together until warmed through. Remove from heat.
Once the cauliflower is done roasting, drizzle the buffalo sauce over the bites, tossing gently to coat evenly.
Return the coated cauliflower to the oven for an additional 10 minutes to allow the sauce to set and caramelize slightly.
Remove from the oven and let cool for a couple of minutes before serving.
Notes
Serve warm with ranch or blue cheese dressing and fresh veggies on the side.
