4 bone-in pork chops

Salt and pepper, to taste

1 tablespoon olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 cup beef broth

1 cup heavy cream

4 large potatoes, thinly sliced

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Fresh parsley, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Season Pork Chops: Season the pork chops generously with salt and pepper on both sides.

      Sear Pork Chops: In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear them for about 4-5 minutes on each side until browned. Remove from skillet and set aside.

        Sauté Onions and Garlic: In the same skillet, add sliced onions and sauté until they become translucent, about 3-4 minutes. Add minced garlic and sauté for an additional 1 minute.

          Create Sauce: Stir in smoked paprika and dried thyme, followed by the beef broth and heavy cream. Bring the mixture to a simmer and let it cook for about 5 minutes until slightly thickened. Season with additional salt and pepper as needed.

            Layer Potatoes: In a greased 9x13 inch casserole dish, layer half of the sliced potatoes evenly at the bottom. Pour half of the sauce over the potatoes, then sprinkle with half of the cheddar cheese.

              Layer Pork Chops: Place the seared pork chops on top of the cheese layer. Then layer the remaining potatoes over the pork chops and pour the rest of the sauce on top.

                Final Cheese Layer: Finish by sprinkling the remaining cheddar and Parmesan cheese evenly over the top of the casserole.

                  Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

                    Rest and Serve: Allow the casserole to cool for about 5-10 minutes before serving. Garnish with fresh parsley before plating.
