In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally until they are golden brown and fork-tender. Remove the potatoes from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil. Increase the heat to medium-high. Season the steak cubes with salt, pepper, thyme, and smoked paprika. Add the steak to the skillet in a single layer and sear for about 3-4 minutes until browned, stirring occasionally.
Reduce the heat to medium, add the minced garlic and butter to the skillet. Stir everything together and cook for an additional 2-3 minutes, ensuring the steak is coated in the garlic butter.
Return the cooked potatoes to the skillet with the steak and garlic butter mixture. Stir well to combine all ingredients and heat through for another 2-3 minutes.
Once everything is heated through, taste and adjust the seasoning if necessary. Remove from heat, garnish with chopped fresh parsley, and serve hot.
