Instructions
Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and sugar until smooth and fluffy, about 2-3 minutes.
Beat in the egg, vanilla extract, and almond extract until well combined.
Gradually add the dry ingredients into the wet mixture, mixing until just combined.
Gently fold in the rainbow sprinkles, making sure to evenly distribute them throughout the cookie dough.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. The centers will appear soft, which is perfect for chewy cookies!
Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Notes
Stack the cookies in a colorful treat jar or plate them on a rainbow-themed platter. Serve with a glass of milk for a delightful pairing!
