1 lb ground beef (or plant-based substitute)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 packet taco seasoning

3 cups chicken broth (or vegetable broth for a vegetarian option)

12 oz pasta (preferably penne or rotini)

1 cup canned diced tomatoes (drained)

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

1/2 cup cream cheese

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

1 tablespoon olive oil

Instructions
 

In a large skillet or pan over medium heat, add the olive oil. Once hot, add the diced onion and bell pepper, sautéing for about 3-4 minutes until softened.

    Add the minced garlic and cook for an additional minute until fragrant.

      Add the ground beef (or plant-based substitute) to the skillet. Cook until browned, breaking it apart with a wooden spoon as it cooks, about 5-7 minutes.

        Stir in the taco seasoning, ensuring the meat is fully coated. Pour in the chicken broth and bring to a simmer.

          Once simmering, add the pasta, diced tomatoes, and corn. Stir well to combine. Cover the skillet and cook for about 10-12 minutes, stirring occasionally, until the pasta is cooked and has absorbed most of the liquid.

            Reduce the heat to low; stir in the cream cheese until fully incorporated. Then, add the shredded cheddar cheese and stir until melted and creamy.

              Taste the mixture and season with salt and pepper, if needed.

                Once combined, remove from heat and let it sit for a few minutes before serving to allow it to thicken.
