In a medium saucepan, combine the melted coconut oil, peanut butter, honey (or maple syrup), cocoa powder, and salt. Heat over low to medium heat until everything is fully melted and combined, stirring frequently.
Once the mixture is smooth and well combined, remove from heat and stir in the vanilla extract.
Gradually add the rolled oats to the chocolate mixture, stirring until everything is well coated. If you're using mini chocolate chips, fold them in at this stage.
Line a baking sheet with parchment paper. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared sheet, forming cookie shapes.
Place the cookies in the refrigerator for at least 30 minutes to set and firm up.
Once set, remove from the fridge and enjoy your delicious no-bake cookies!
