4 boneless, skinless chicken breasts

2 cups mushrooms, sliced (shiitake and cremini for depth)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 tablespoon soy sauce (low sodium)

1 tablespoon olive oil

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Fresh parsley for garnish

Optional: 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Instructions
 

Begin by seasoning the chicken breasts on both sides with salt, pepper, and thyme.

    Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and sear for about 5-7 minutes per side until golden brown. Remove the chicken from the skillet and set aside.

      In the same skillet, add the chopped onion and sauté for about 2-3 minutes until translucent.

        Stir in the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are soft and browned.

          Pour in the chicken broth and soy sauce, stirring well to combine all the flavors. Bring the mixture to a gentle simmer.

            Return the seared chicken breasts to the skillet, letting them nestle in the sauce. Cover and cook for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).

              If a thicker sauce is desired, stir in the cornstarch mixture and cook for an additional 2-3 minutes until the sauce thickens.

                Taste and adjust seasoning, adding more salt, pepper, or thyme as needed.

                  Garnish with freshly chopped parsley before serving.
