Instructions
In a medium bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, and cinnamon. Stir until well mixed.
Add the chopped pecans and a pinch of salt, mixing gently to incorporate.
Transfer the mixture to a mason jar or airtight container. Seal securely.
Refrigerate overnight (or for at least 4-6 hours) to allow the oats to absorb the liquid and soften.
In the morning, give the oats a good stir. If they are too thick, add a splash more almond milk to reach your desired consistency.
Top with sliced banana and a drizzle of additional maple syrup before serving.
Notes
Layer the oats in a mason jar with banana slices and pecans on top for an appealing, grab-and-go breakfast option.
