Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the rolled oats, chopped pecans, shredded coconut, sunflower seeds, and salt. Mix well to combine.
In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until fully blended.
Pour the wet mixture over the dry ingredients. Using a spatula, stir until all dry ingredients are evenly coated.
Spread the granola mixture evenly on the prepared baking sheet. Press it down firmly with the spatula to help it stick together.
Bake in the preheated oven for 20-25 minutes or until golden brown, stirring halfway through to ensure even cooking.
Remove from the oven and allow it to cool completely on the baking sheet; this will help the clusters form.
Once cooled, break into clusters and mix in the dried cranberries or raisins if desired.
Store in an airtight container at room temperature for up to two weeks.
