Instructions
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
In another bowl, mix the milk, egg, and vanilla extract. Stir until the mixture is smooth.
Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; some lumps are fine.
Fold in the diced apples, ensuring they are evenly distributed throughout the batter.
Heat about 2 inches of oil in a deep skillet or fryer to 350°F (175°C).
Using a spoon or an ice cream scoop, drop tablespoon-sized portions of the batter into the hot oil. Fry in batches, making sure not to overcrowd the pan.
Cook for 2-3 minutes on each side, or until golden brown. Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
In a small bowl, mix the maple syrup until it reaches a smooth consistency (you can warm it slightly to thin if needed).
Once the fritters are slightly cooled, drizzle or dip them into the warm maple glaze, ensuring they are coated well.
