Instructions
In a medium saucepan, bring the vegetable broth to a boil.
Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes, allowing the couscous to absorb the broth.
Fluff the couscous with a fork and allow it to cool to room temperature.
In a large bowl, combine the halved cherry tomatoes, diced cucumber, chopped red onion, parsley, mint, and feta cheese.
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper until well combined.
Add the cooled couscous to the large bowl with the vegetables and herbs.
Pour the lemon dressing over the couscous mixture and toss gently to combine all ingredients thoroughly.
Taste and adjust the seasoning with more salt and pepper if needed.
For best flavor, let the salad rest for at least 30 minutes before serving to allow the flavors to meld.
