Instructions
Cook the spaghetti or linguine according to package instructions in a large pot of salted boiling water. Once cooked, reserve 1/2 cup of pasta water, then drain the pasta and set aside.
In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant but not browned.
Add the shrimp to the skillet, season with salt and pepper, and cook for about 2-3 minutes on each side or until they turn pink and opaque.
Pour in the lemon juice and zest, stirring to combine, then add the remaining 2 tablespoons of olive oil and stir well.
Add the cooked pasta to the skillet, tossing everything together to combine. If the pasta seems dry, gradually add reserved pasta water until you reach your desired consistency.
Remove from heat, stir in the chopped parsley, and adjust seasoning with additional salt, pepper, or lemon juice if desired.
Notes
Serve on a large platter or in individual bowls, garnished with extra parsley and Parmesan cheese.
