4 boneless pork chops (about 1 inch thick)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 onion, sliced

2 cups sliced mushrooms

1 cup chicken broth

1 tablespoon Dijon mustard

1 cup heavy cream

1 teaspoon thyme (fresh or dried)

Fresh parsley (for garnish)

Prepare the Pork Chops: Season both sides of the boneless pork chops with salt, pepper, garlic powder, and smoked paprika.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear them for about 4-5 minutes on each side until golden brown. Remove the chops from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced onions and mushrooms. Sauté for 5-7 minutes, or until the onions are translucent and the mushrooms are softened.

        Create the Sauce: In the skillet, pour in the chicken broth and stir in the Dijon mustard. Scrape up any browned bits from the bottom of the pan for extra flavor. Allow this to simmer for about 3 minutes.

          Add Cream and Seasoning: Lower the heat and stir in the heavy cream and thyme. Mix until everything is well combined and the sauce is slightly thickened, about 3-4 more minutes.

            Return the Chops: Add the seared pork chops back into the skillet, spooning the sauce over them. Cover and let them simmer in the sauce for another 5-7 minutes or until the pork chops are cooked through (internal temperature should reach 145°F or 63°C).

              Serve: Once cooked, remove from heat and let the chops rest for a couple of minutes in the sauce before serving.
