1.5 lbs (680g) chicken thighs, boneless and skinless

1/3 cup honey

1/4 cup soy sauce (low sodium)

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon olive oil

1 teaspoon sesame oil

1/2 teaspoon crushed red pepper flakes (optional for heat)

1/2 cup chicken broth

Salt and black pepper to taste

2 green onions, thinly sliced for garnish

Sesame seeds for garnish (optional)

Instructions
 

Prep the Chicken: Season the chicken thighs with salt and black pepper on both sides.

    Sauté: Set your Instant Pot to the 'Sauté' mode. Add olive oil. Once hot, add the chicken thighs, and sauté for about 3-4 minutes on each side until lightly browned.

      Make the Sauce: In a medium bowl, whisk together honey, soy sauce, minced garlic, ginger, sesame oil, and crushed red pepper flakes until well combined.

        Pressure Cook: Pour the sauce over the chicken in the Instant Pot. Add the chicken broth around the sides. Close the lid, ensuring the valve is set to 'Sealing'. Select 'Manual' or 'Pressure Cook' and set it for 10 minutes.

          Natural Release: Once the cooking time is complete, allow a natural pressure release for 10 minutes, then carefully switch the valve to ‘Venting’ to release any remaining pressure.

            Thicken the Sauce (Optional): If you prefer a thicker sauce, set the Instant Pot back to 'Sauté'. Remove the chicken pieces and let the sauce simmer for an additional 5-7 minutes until it thickens. Stir frequently.

              Serve: Return the chicken to the pot to coat it with the sauce. Serve the honey garlic chicken over rice or noodles, and garnish with sliced green onions and sesame seeds if desired.
