Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.
In a medium bowl, whisk together honey, Sriracha sauce, soy sauce, rice vinegar, minced garlic, ground ginger, and sesame oil until well combined. Taste and adjust the heat level by adding more Sriracha if desired.
Pat the chicken wings dry with paper towels, then season them with salt and pepper.
In a large bowl, combine the chicken wings and half of the honey Sriracha sauce. Toss until the wings are well coated.
Arrange the wings in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, or until the wings are crispy and cooked through (internal temperature should reach 165°F/74°C).
During the last 5 minutes of baking, brush the wings with the remaining honey Sriracha sauce for an extra sticky glaze.
Remove the wings from the oven and let them rest for a few minutes. Garnish with sesame seeds and sliced green onions before serving.
