Instructions
In a large bowl, whisk together honey, lime juice, soy sauce, olive oil, minced garlic, cumin, black pepper, salt, and red pepper flakes (if using).
Introduce the cubed chicken into the marinade, ensuring all pieces are well-coated. Cover with plastic wrap and refrigerate for at least 30 minutes to 2 hours for maximum flavor.
Heat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for about 15-30 minutes to prevent burning.
Thread the marinated chicken cubes onto skewers, leaving a little space between each piece for even cooking.
Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks. The internal temperature should reach 165°F (75°C).
Remove the skewers from the grill, let them rest for a couple of minutes, then garnish with fresh cilantro before serving.
Notes
For extra flavor, marinate the chicken longer if possible.
