In a mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, olive oil, sesame seeds, red pepper flakes, salt, and pepper. Whisk until well mixed.
Add the shrimp to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for 30 minutes.
Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.
Once the grill is hot, place the skewers on the grill. Cook for 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes, or until the shrimp are pink and cooked through.
Remove skewers from the grill and let them rest for a minute.
Garnish with chopped fresh cilantro or green onions before serving.
