Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine olive oil, minced garlic, dried Italian herbs, salt, and pepper. Stir to create a garlic oil mixture.
Add the baby carrots to the bowl and toss until they are evenly coated with the garlic oil mixture.
Spread the coated carrots in a single layer on the prepared baking sheet.
Roast the carrots in the preheated oven for 20 minutes.
After 20 minutes, remove the baking sheet from the oven and sprinkle grated Parmesan cheese evenly over the carrots.
Return the baking sheet to the oven and continue roasting for an additional 10 minutes, or until the carrots are tender and the cheese is golden and bubbly.
Once done, remove from the oven, and let them cool for a few minutes.
Garnish with freshly chopped parsley before serving.
