Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the halved Brussels sprouts, minced garlic, olive oil, salt, black pepper, and red pepper flakes (if using). Toss well until the Brussels sprouts are evenly coated.
Spread the mixture in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and their outer leaves are crispy. Stir halfway through for even cooking.
Remove the baking sheet from the oven and immediately sprinkle grated Parmesan cheese over the hot Brussels sprouts. Return to the oven for an additional 5 minutes, allowing the cheese to melt and become slightly golden.
Once done, drizzle balsamic vinegar over the Brussels sprouts for a tangy finish.
Garnish with chopped fresh parsley before serving.
