In a large mixing bowl, combine the olive oil, minced garlic, thyme, rosemary, smoked paprika, salt, and pepper. Add the steak bites to the mixture and toss to coat evenly. Let it marinate for about 15 minutes.
While the steak is marinating, place the halved baby potatoes on a baking sheet. Drizzle with a little olive oil, season with salt and pepper, and toss to coat.
Roast the potatoes in the preheated oven for about 25-30 minutes, or until golden brown and tender, turning halfway through cooking.
Heat a large skillet over medium-high heat and add the marinated steak bites. Sear the steak on all sides for about 2-3 minutes until browned but still tender. Do this in batches if necessary to avoid overcrowding the pan.
Once the steak bites are cooked to your desired level, remove them from the skillet and add 2 tablespoons of butter. Let it melt and mix it with the steak juices.
Drizzle this buttery sauce over the steak bites and toss well to coat.
Serve the steak bites on a platter alongside the roasted baby potatoes. Garnish with fresh parsley for an added touch.
