Garlic Herb Roasted Carrots

Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the olive oil, minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper.
Add the baby carrots to the bowl and toss them in the garlic herb mixture until well-coated.
Spread the carrots out in a single layer on a baking sheet lined with parchment paper.
Roast the carrots in the preheated oven for 25-30 minutes, tossing halfway through, until they are tender and slightly caramelized.
Once done, remove the carrots from the oven and sprinkle with lemon zest and freshly chopped parsley before serving.
Notes
For extra flavor, try adding a splash of balsamic vinegar before roasting.
