Ingredients

baby carrots
4
cloves
garlic, minced

tablespoons
olive oil

teaspoon
dried thyme
1
teaspoon
dried rosemary
1
teaspoon
honey
to taste
salt
to taste
pepper
for garnish
fresh parsley, chopped
Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the olive oil, minced garlic, dried thyme, dried rosemary, honey, salt, and pepper. Mix well to create a marinade.
Add the carrots to the bowl and toss them in the marinade until they are well coated.
Lay the coated carrots in a single layer on a lined baking sheet to ensure even roasting.
Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized, tossing halfway through for even cooking.
Once done, remove the carrots from the oven and allow them to cool for a minute or two.
Transfer the carrots to a serving dish and sprinkle with fresh chopped parsley for an extra pop of color and flavor.
Notes
For a vegan option, substitute honey with maple syrup.
