1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, diced

2 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

1 lime, juiced

1/4 cup cilantro, chopped (optional)

Begin by placing the boneless chicken breasts at the bottom of the crockpot.

    In a separate bowl, combine the black beans, corn, diced tomatoes (with their juice), onion, and garlic. Stir in the cumin, chili powder, smoked paprika, lime juice, salt, and pepper until well mixed.

      Pour the mixture over the chicken in the crockpot, making sure the chicken is well covered.

        Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

          Once cooked, shred the chicken directly in the crockpot using two forks, mixing it thoroughly with the other ingredients.

            Taste and adjust the seasoning if needed, adding more salt, pepper, or lime juice as desired.

              If using cilantro, stir it in just before serving for a fresh flavor boost.
