Ingredients

4 boneless, skinless chicken breasts

4 slices of ham (preferably prosciutto)

4 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

½ cup cream cheese, softened

¼ cup Dijon mustard

2 tablespoons fresh parsley, chopped (for garnish)

Cooking oil (for frying)

Instructions

Prep the Chicken: Preheat your oven to 375°F (190°C). Place a chicken breast between two sheets of plastic wrap. Gently pound the chicken with a meat mallet until about ¼ inch thick. Repeat with the remaining breasts.

Assemble the Filling: Spread 1 tablespoon of cream cheese and 1 tablespoon of Dijon mustard on each flattened chicken breast. Layer 1 slice of ham and 1 slice of Swiss cheese on top.

Roll Up: Starting from one end, carefully roll the chicken tightly, making sure the filling stays inside. Secure each roll with toothpicks, if necessary.

Prepare the Dredging Station: Set up three shallow dishes; one with flour seasoned with garlic powder, thyme, salt, and pepper; the second with beaten eggs; and the third with panko breadcrumbs.

Coat the Chicken: Roll each chicken roll in the seasoned flour, dip into the egg wash, and finally coat with panko breadcrumbs, ensuring each piece is well-covered.

Fry the Chicken: In a large skillet, heat about ¼ inch of cooking oil over medium-high heat. Once hot, add the chicken rolls and fry for about 4-5 minutes on each side, or until golden brown and crispy. Work in batches if necessary to avoid overcrowding the skillet.

Bake: Transfer the fried chicken to a baking dish and place it in the preheated oven. Bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

Serve: Once cooked, remove the toothpicks from the chicken rolls. Slice each cordon bleu and arrange on a serving platter. Garnish with chopped parsley for a fresh finish.
