12 oz. rigatoni pasta

1 lb. Italian sausage (mild or spicy, casings removed)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup fresh spinach, roughly chopped

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Rigatoni: In a large pot, bring salted water to a boil and add the rigatoni. Cook according to package instructions until al dente. Drain and set aside.

    Brown the Sausage: In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

      Sauté Aromatics: Add the diced onion to the skillet with the browned sausage. Sauté for 3-4 minutes until the onion becomes translucent. Add the minced garlic and red pepper flakes (if using) and cook for an additional 1-2 minutes until fragrant.

        Create the Sauce: Pour in the heavy cream and chicken broth into the skillet. Stir well to combine and bring to a gentle simmer. Allow the mixture to bubble for about 5 minutes, letting it thicken slightly.

          Incorporate Cheese and Spinach: Remove the skillet from the heat and stir in the grated Parmesan cheese until melted and creamy. Add the fresh spinach and mix until wilted. Season with salt and black pepper to taste.

            Combine Pastas and Sauce: Add the cooked rigatoni to the skillet and toss everything together until the pasta is coated with the creamy sauce.

              Serve: Divide the creamy sausage rigatoni among serving plates. Garnish with fresh basil leaves and additional Parmesan if desired.
