Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking soda, and salt. Mix well to combine.
In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, vanilla extract, and orange zest until fully blended.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Gently fold in the chopped dried cranberries and nuts (if using) until evenly distributed throughout the dough.
Use a tablespoon or a cookie scoop to portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Slightly flatten each cookie with the back of a spoon.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers remain soft.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Serve the cookies on a bright orange plate to enhance the citrus theme. Drizzle honey over warm cookies for added sweetness.
