Coconut Mango Overnight Oats
A delicious and nutritious breakfast option made with rolled oats, coconut milk, and fresh mango.

Ingredients

cup
rolled oats
1
cup
coconut milk
1
ripe
mango, diced
1
tablespoon
chia seeds
1
tablespoon
honey or maple syrup (optional)
1/2
teaspoon
vanilla extract
a pinch
salt
to taste
shredded coconut for topping
to taste
fresh mint leaves for garnish
Instructions
In a medium bowl or jar, combine the rolled oats, coconut milk, chia seeds, honey (if using), vanilla extract, and salt.
Stir well to make sure all ingredients are evenly mixed.
Gently fold in half of the diced mango into the oat mixture.
Cover the bowl or seal the jar with a lid and refrigerate overnight (or for at least 4 hours) to allow the oats to soak and thicken.
In the morning, give the mixture a good stir. If it’s too thick, add a splash of coconut milk to reach your desired consistency.
Divide the oats between serving bowls or jars and top with the remaining diced mango, shredded coconut, and fresh mint leaves for garnish.
Notes
Feel free to substitute almond milk for coconut milk if preferred.
