In a large mixing bowl, combine the rolled oats, shredded coconut, almond butter, and honey or maple syrup. Mix well until all the ingredients are fully integrated.
Add the lime zest, lime juice, chia seeds, and a pinch of sea salt. Stir until the mixture is evenly combined and slightly sticky.
Refrigerate the mixture for about 30 minutes to make it easier to handle.
Once chilled, scoop out tablespoon-sized portions of the mixture and roll into balls using your hands. Place them on a parchment-lined plate or tray.
Optionally, roll the energy bites in extra shredded coconut for added texture and flavor.
Refrigerate the completed energy bites for an additional 30 minutes to firm up.
