Coconut Almond Energy Balls

Ingredients

almonds, toasted

unsweetened shredded coconut

rolled oats

almond butter
1/4

honey or maple syrup

teaspoon
vanilla extract

sea salt

chocolate chips or cacao nibs (optional)
Instructions
In a food processor, combine the toasted almonds and pulse until they become a coarse meal.
Add the shredded coconut, rolled oats, almond butter, honey (or maple syrup), vanilla extract, and sea salt to the food processor.
Blend all the ingredients together until they form a sticky dough. If using, fold in chocolate chips or cacao nibs at this stage.
Use your hands to roll the mixture into small bite-sized balls, about the size of a tablespoon.
Place the energy balls on a parchment-lined baking sheet or plate.
Once all the mixture is rolled into balls, refrigerate for at least 30 minutes to firm them up.
Store the energy balls in an airtight container in the refrigerator for up to a week, or freeze them for longer storage.
Notes
Serve in a small bowl, garnished with shredded coconut or chopped almonds.
