In a large mixing bowl, combine the warm water, 2 tablespoons of sugar, and active dry yeast. Stir gently and let it sit for about 5 minutes until foamy.
Add the flour and salt to the yeast mixture and mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic.
Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Once the dough has risen, punch it down and divide it into small pieces (about 1-inch). Form each piece into a ball.
In a large pot, bring 8 cups of water to a boil and add the baking soda.
Boil the pretzel bites in batches (about 10-12 at a time) for 30 seconds, then transfer them to the prepared baking sheet.
Brush the top of each pretzel bite with the beaten egg.
In a small bowl, combine the ½ cup of sugar and cinnamon. Sprinkle generously over the pretzel bites.
Bake in the preheated oven for 12-15 minutes or until golden brown.
Once out of the oven, brush the warm pretzel bites with melted butter for added flavor.
