Instructions
In a mixing bowl, combine lime juice, chopped cilantro, minced garlic, cumin, chili powder, salt, and black pepper.
Add the chicken thighs to the marinade and toss well to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off.
Grill or cook the chicken for about 5-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Remove the chicken from heat and let it rest for a few minutes before slicing it into strips.
While the chicken rests, warm the tortillas on the grill or a separate skillet for about 30 seconds per side until fragrant and pliable.
To assemble the tacos, place a few strips of chicken onto each tortilla, followed by slices of avocado and a handful of shredded cabbage.
Drizzle with sour cream and sprinkle with extra cilantro leaves. Serve with lime wedges on the side for added flavor.
Notes
