Instructions
In a microwave-safe mug (about 12 oz size), combine the all-purpose flour, sugar, cocoa powder, baking powder, and salt. Whisk them together until well blended.
Add the milk, vegetable oil, vanilla extract, and cooled espresso to the dry ingredients in the mug. Stir everything together until you have a smooth batter, making sure there are no dry flour pockets.
If you're using chocolate chips or nuts, gently fold them into the batter.
Microwave the mug cake on high for about 1 minute and 10 seconds. Cooking times may vary based on your microwave wattage, so keep an eye on it; the cake should rise and appear set but still slightly moist in the center.
Allow the mug cake to cool for a couple of minutes before digging in, as it will be very hot.
Notes
Serve straight from the mug or on a plate, and top with ice cream or whipped cream for extra indulgence.
