Wash the strawberries thoroughly and pat them dry with a paper towel. Cut them in half lengthwise to form heart shapes, placing them cut side up on a parchment-lined baking sheet.
In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring after each interval until melted and smooth.
Dip each strawberry half into the melted dark chocolate, ensuring it is fully coated. Shake off any excess chocolate and place it back on the baking sheet. Repeat this for all strawberries.
In another microwave-safe bowl, melt the white chocolate chips in the same manner as the dark chocolate until smooth.
Using a fork or a piping bag, drizzle the melted white chocolate over the dark chocolate-covered strawberries artistically.
While the white chocolate is still wet, sprinkle some pink or red sprinkles over the strawberries for a playful touch.
Place the baking sheet in the refrigerator for about 30 minutes to allow the chocolate to set.
Once set, transfer the chocolate-covered strawberry hearts to a serving platter and enjoy!
