Instructions
Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
In a large mixing bowl, combine the mashed bananas and melted coconut oil, mixing until well blended.
Add the brown sugar and vanilla extract to the banana mixture, stirring until fully incorporated.
Sprinkle the baking soda and salt over the mixture, stirring gently to combine.
Gradually fold in the flour until just mixed, being careful not to overmix.
If using, add the cinnamon for extra flavor and fold in the vegan chocolate chips.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Slice the bread and serve warm with a sprinkle of extra chocolate chips on top and a dusting of powdered sugar for an elegant finish.
