In a small bowl, whisk together the chipotle sauce, honey, soy sauce, lime juice, and minced garlic. This will be your marinade.
Place the salmon fillets in a shallow dish and pour the marinade evenly over them. Make sure the salmon is well-coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for a stronger flavor).
Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper for easy cleanup.
Remove the salmon from the marinade, reserving the marinade for later. Place the fillets on the prepared baking tray. Season with salt and pepper.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
While the salmon is baking, pour the reserved marinade into a small saucepan and bring to a gentle simmer over medium heat. Allow it to reduce for about 5 minutes until slightly thickened.
Once the salmon is done, drizzle the reduced marinade over the fillets.
Garnish with chopped cilantro and serve with lime wedges on the side.
