2 boneless, skinless chicken breasts, cubed

8 ounces spaghetti

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 zucchini, sliced

1 can (14 ounces) diced tomatoes, undrained

1 cup chicken broth

1 teaspoon dried basil

1 teaspoon oregano

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Cook the Spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sear the Chicken: In a large skillet over medium heat, heat the olive oil. Add the cubed chicken and season with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and cook for 2-3 minutes until translucent. Add the minced garlic, red bell pepper, and zucchini. Sauté for an additional 4-5 minutes until the vegetables are slightly tender.

        Combine Ingredients: Stir in the diced tomatoes (with juices), chicken broth, basil, oregano, and red pepper flakes. Let the mixture simmer for about 5-7 minutes to allow the flavors to meld.

          Return Chicken and Add Spaghetti: Add the cooked chicken back to the skillet. Then, fold in the spaghetti, adding reserved pasta water as necessary to create a cohesive sauce. Stir everything together until well combined and heated through.

            Serve and Garnish: Divide the chicken spaghetti into serving bowls. Top each serving with fresh basil leaves and a generous sprinkle of grated Parmesan cheese.
