Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the softened butter and brown sugar together until creamy and fluffy, about 2-3 minutes.
Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract and applesauce until fully combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to over-mix.
Gently fold in the diced apples and cinnamon, ensuring that the apple pieces are evenly distributed.
Fill each cupcake liner about 2/3 full with the batter.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
Once baked, allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Once cooled, use a piping bag to frost each cupcake with whipped cream. Drizzle caramel sauce generously over the top of the frosting.
If desired, sprinkle chopped nuts on top for an added crunch and flavor.
Notes
Arrange the cupcakes on a decorative platter and drizzle additional caramel sauce around them for visual appeal.
