Season the chicken breasts with Cajun seasoning, salt, and pepper.
In a skillet, heat olive oil over medium heat. Cook the chicken breasts for about 6-7 minutes on each side or until cooked through and juices run clear. Remove chicken and let it rest for 5 minutes.
Once cooled, slice the chicken into thin strips.
Lay a tortilla flat on a clean surface. Spread 2 tablespoons of Caesar dressing in the center of the tortilla.
Add a handful of chopped Romaine lettuce, sliced Cajun chicken, cherry tomato halves, and sprinkle with grated Parmesan cheese.
Fold in the sides of the tortilla and then roll up from the bottom to secure all the ingredients inside.
Cut the wraps in half diagonally and arrange on a serving platter. Drizzle any remaining Caesar dressing over the top and garnish with chopped parsley.
