Blackberry Lemon Yogurt Parfait
A refreshing and healthy parfait made with layers of Greek yogurt, fresh blackberries, and granola, perfect for breakfast or a snack.

Ingredients

plain Greek yogurt
1
tablespoon
honey (or maple syrup)

zest
of lemon
1
tablespoon
fresh lemon juice

fresh blackberries
1
cup
granola (your choice)
to taste
mint leaves for garnish
Instructions
In a mixing bowl, combine the Greek yogurt, honey, lemon zest, and lemon juice. Mix well until fully incorporated and smooth.
In serving glasses or bowls, start layering the parfait. Begin with a layer of the yogurt mixture (about 1/4 cup per serving).
Add a layer of fresh blackberries on top of the yogurt, approximately 1/4 cup.
Next, sprinkle a layer of granola (about 2 tablespoons) over the blackberries.
Repeat the layers until the glasses are filled, finishing with a layer of blackberries and a sprinkle of granola on top.
Garnish with a mint leaf for a fresh touch and extra flavor.
Notes
Feel free to substitute honey with maple syrup for a vegan option.
